Kitniyot include corn, rice, peas, beans, tofu, any type of soy and there are those who hold that quinoa is also kitniyot although that distinction is new, once upon a time like until three or so years ago, it was not considered that.
Most Ashkenazi Jews don't use kitniyot on Pesach. The reasons are long and complicated, primarily anything that could be used to make bread in any form was turned into a "no-no" for Ashkenazim. Only at times of famine did they get a heter (permission) to use it.
If your husband's family is Ashkenazi, they probably keep Pesach by not using any kind of Kitniyot. That includes corn oil (use olive or canola), tofu, soy milk etc.
