What do you freeze for later?

We made two trays of eggs rolls -- kreplach substitute. We used one for erev Yom Kippur, and froze the other one for Hoshana Rabba.

We also made 6 pumpkin pies -- that's as much as my oven can fit, and froze 5 of them.

I'm looking for more ideas.
